
Well, although the rest of our summer recipes were a failure we managed to come out of the evening with one gem. A Very tasty guacamole… nice and light and simple to make.
Dos Camino’s Guacamole Dip
Ingredients
- 2 Tablespoons finely chopped Cilantro leaves;
- 2 Teaspoon finely chopped white onion;
- 2 Teaspoons minced Jalapeno;
- 1/2 Teaspoon Kosher salt;
- 2 Large avocados, peeled and seeded;
- 2 Tablespoons finely chopped plum tomato (cored and seeded);
- 1 Teaspoon finely chopped pressed garlic (the original recipe doesn’t call for garlic, but we added it anyways…cause we love garlic!)
- 1 Teaspoon of olive oil;
- 2 Teaspoons fresh lime juice.
Instructions
- Add 1 tablespoon of cilantro, 1 teaspoon each of onion and the minced chili, and 1/2 teaspoon of salt to a medium bowl or a mortar. Mash together with spoon or pestle until a paste is formed.
- Dice avocado and gently fold into the paste, leaving some chunks.
- Add the remaining cilantro, onions, and chilies, and continue to mix.
- Squeeze fresh lime juice over the top. Gently fold in tomato.
- Serve with tortilla chips
TGIAC Notes
- This recipe is a great appetizer for 2 to 4 people.
- For a twist, add some goat cheese and heat it up. Either way, it’s good!

Chop the white onions. Even if you get a little teary-eyed don’t despair… its worth the effort!
Mince the garlic and let it sit in olive oil
Finely chop the cilantro leaves
Core and clean the jalapeno pepper…make sure you don’t touch your eyes! And always wash after touching….you know what we mean! Finely chop the jalapeno pepper.
Clean and seed the plum tomatoes. And then, finely chop the tomatoes too!
Add half of the onions, garlic, cilantro and jalapeno in a mortar and mash away!.
Continue until pasty!
Throw in avocados into the paste….
…and mash! God this is fun!
Add the remaining cilantro, onions, and chilies, and keep mashing!
Squeeze fresh lime juice over the top. Throw in tomatoes and do the mash!
Serve with tortilla chips. And dip and scoop and munch and dip and scoop and munch…. just in case you needed instructions on how to eat it…. we were really good at that part!
